Bar Cargo is a Roman-style pizza bar launched by Anthony Stefani in an effort to bring a taste of Rome home to Chicago. The pizzas at Bar Cargo are created using a unique custom blend of imported flours from Rome that are shipped overseas directly to us on cargo containers. The dough has a 96 hour rise period that creates a perfectly light and crispy crust.
